- 1 cup Cottage Cheese
- 1 cup Rolled Oats
- 1/2 cup Applesauce or 1 small Grated Apple
- 1 Large Egg
- 1/2 tsp Cinnamon
- 1 tbsp Honey or Maple Syrup (optional)
- 1/2 tsp Baking Powder
- A pinch of Salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin pan or line it with mini muffin liners.
- In a mixing bowl, combine cottage cheese, oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup, baking powder, and salt. Mix until well combined.
- Allow the batter to sit for 5 minutes to let the oats absorb some moisture.
- Scoop the mixture evenly into the mini muffin pan, filling each cup almost to the top.
- Bake for 18–20 minutes, or until the bites are set and lightly golden on top.
- Let the bites cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
- Enjoy warm or store in the fridge for up to 4 days.
Notes
For a gluten-free version, replace rolled oats with certified gluten-free oats. For a dairy-free variant, use a plant-based yogurt or cottage cheese alternative.
