Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 2 cups cream cheese, softened
  • 2 teaspoons vanilla extract
  • 1 cup heavy cream
  • 1 cup white chocolate, melted
  • 1 cup cranberry jam

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into a 9-inch springform pan.
  3. Beat the softened cream cheese, 3/4 cup sugar, and vanilla extract until smooth.
  4. Whip the heavy cream until stiff peaks form; then fold it into the cream cheese mixture.
  5. Add the melted white chocolate and mix until smooth.
  6. Pour the filling over the crust and bake for about 50 minutes or until set but slightly jiggly.
  7. Cool to room temperature, then spread cranberry jam on top and refrigerate for at least 4 hours to set.

Notes

For a lighter option, consider using low-fat cream cheese or Greek yogurt. Ensure cream cheese is at room temperature for easier blending.
