- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1/2 cup chocolate chips
- 1/2 cup brewed espresso or strong coffee
- 1 tablespoon powdered sugar (for glaze)
Instructions
- In a large mixing bowl, combine flour, sugar, baking powder, and salt. Whisk until well combined.
- In a separate bowl, mix milk, egg, and melted butter until well blended. Pour into the dry ingredients and stir gently until just combined.
- Fold in chocolate chips. Heat a non-stick skillet over medium heat and lightly grease. Pour about 1/4 cup of batter for each pancake and cook until bubbles form. Flip and cook until golden brown.
- Mix brewed espresso with powdered sugar and drizzle over pancakes before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. For a healthier twist, use whole wheat flour or almond flour.
