Ingredients

  • 1/2 cup chocolate chips
  • 1/2 cup brewed espresso or strong coffee
  • 1 tablespoon powdered sugar (for glaze)

Instructions

  1. In a large mixing bowl, combine flour, sugar, baking powder, and salt. Whisk until well combined.
  2. In a separate bowl, mix milk, egg, and melted butter until well blended. Pour into the dry ingredients and stir gently until just combined.
  3. Fold in chocolate chips. Heat a non-stick skillet over medium heat and lightly grease. Pour about 1/4 cup of batter for each pancake and cook until bubbles form. Flip and cook until golden brown.
  4. Mix brewed espresso with powdered sugar and drizzle over pancakes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For a healthier twist, use whole wheat flour or almond flour.
