Description

Chocolate Bomboloni are soft Italian donuts filled with smooth chocolate cream, perfect for a cozy dessert or brunch.


Ingredients

Scale

2 ½ cups bread flour

3 tbsp sugar

1 tsp salt

2 ¼ tsp active dry yeast

2 eggs

½ cup warm milk

2 tbsp melted butter

Oil for frying

½ cup sugar for coating

Chocolate pastry cream or Nutella for filling


Instructions

  1. Mix: the bread flour, sugar, salt, and yeast in a large bowl.
  2. Add:  eggs, warm milk, and melted butter, then knead until smooth and elastic.
  3. Cover: let the dough rise for 1 hour or until doubled in size.
  4. Punch down & divide: into 65‑gram balls, and let proof for another hour.
  5. Fry: the dough balls at 350°F (175°C) until golden brown, turning once.
  6. Drain: on paper towels, roll in sugar while warm, and cool slightly.
  7. Pipe: chilled chocolate pastry cream or Nutella into the center of each donut.
  8. Serve: immediately or store in an airtight container for up to 2 days.

Notes

Chill the chocolate pastry cream before piping to ensure a smooth, bakery-quality filling.
