- 1 lb Steak (cut into bite-sized pieces)
- 2 tablespoons Olive oil (for searing)
- 1/2 cup Olive oil (for chimichurri)
- Salt and pepper (to taste)
- 1 cup Fresh parsley (finely chopped)
- 1/4 cup Fresh oregano (finely chopped)
- 4 cloves Garlic (minced)
- 1/2 teaspoon Red pepper flakes (optional)
- 1/4 cup Red wine vinegar
- Juice of 1 Lemon
Instructions
- In a bowl, combine the parsley, oregano, garlic, red pepper flakes, red wine vinegar, and lemon juice. Slowly whisk in 1/2 cup of olive oil, then season with salt and pepper to taste. Set aside.
- Season the steak pieces generously with salt and pepper.
- Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add the seasoned steak bites in a single layer and sear until golden brown and cooked to desired doneness, about 2-3 minutes per side.
- Remove from heat and drizzle with chimichurri sauce before serving.
Notes
For a low-carb alternative, consider using grilled chicken or mushrooms in place of steak. Skewering the bites can make them easier to serve at parties.
