- 1 cup tzatziki sauce

- 1 cup cherry tomatoes (halved)

Instructions
- Preheat the oven to 400°F (200°C).
- Combine the chicken chunks, white rice, tzatziki sauce, chicken broth, halved cherry tomatoes, and diced cucumber in a large baking dish.
- Drizzle with olive oil, and season with salt and pepper. Stir thoroughly.
- Cover the baking dish tightly with aluminum foil and bake for 30-35 minutes.
- Remove the foil and bake for an additional 10 minutes or until the top is slightly browned.
- Let it rest for a few minutes before garnishing with fresh herbs.
Notes
For a gluten-free version, use gluten-free rice or serve over a bed of greens. You can swap out the vegetables for others based on preference.
