Ingredients

  • 1 cup white rice
  • 1 cup tzatziki sauce
  • 2 cups chicken broth
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (diced)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs (like dill or parsley) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the chicken chunks, white rice, tzatziki sauce, chicken broth, halved cherry tomatoes, and diced cucumber in a large baking dish.
  3. Drizzle with olive oil, and season with salt and pepper. Stir thoroughly.
  4. Cover the baking dish tightly with aluminum foil and bake for 30-35 minutes.
  5. Remove the foil and bake for an additional 10 minutes or until the top is slightly browned.
  6. Let it rest for a few minutes before garnishing with fresh herbs.

Notes

For a gluten-free version, use gluten-free rice or serve over a bed of greens. You can swap out the vegetables for others based on preference.
