- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp salt (plus more to taste)
- 1/2 tsp black pepper (plus more to taste)
- 4 cups fresh spinach
- 8 oz mushrooms (button or cremini)
- 2 tbsp butter
- 4 oz cream cheese
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- 1/2 cup chicken broth
Instructions
- Preheat your oven to 375°F (190°C). Season both sides of your chicken breasts with salt, black pepper, and dried herbs.
- Heat olive oil in a large oven-safe skillet over medium-high heat and sear the chicken breasts for 2-3 minutes on each side until golden. Remove and set aside.
- Melt butter in the same skillet, add mushrooms and garlic, and sauté for 5-7 minutes until tender. Stir in fresh spinach until wilted.
- In a bowl, whisk together cream cheese, heavy cream, Parmesan, and chicken broth until smooth. Pour over the chicken and veggies in the skillet.
- Bake uncovered for 20-25 minutes until chicken reaches 165°F (74°C). Broil if desired for a golden top, then let rest for 5 minutes before serving.
Notes
Feel free to substitute cream cheese with Greek yogurt for a lighter alternative. Variations include adding mozzarella, bell peppers, or red pepper flakes for added spice.
