- 2 pieces Chicken breasts
- Salt to taste
- Pepper to taste
- 2 tablespoons Pesto
- 4 slices Fresh mozzarella cheese
- 4 slices Ciabatta or preferred bread
- Olive oil for cooking
- (optional) Fresh basil leaves
Instructions
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a pan over medium heat.
- Add the seasoned chicken breasts to the pan, cooking until golden brown and fully cooked, about 6 to 8 minutes per side.
- During the last few minutes of cooking, add the mozzarella slices on top of the chicken to melt.
- Remove the chicken from the pan and spread pesto on the inside of the ciabatta slices.
- Assemble the sandwich by placing the chicken on one piece of bread, adding fresh basil if desired, and topping with the other slice.
- Serve warm and enjoy your Chicken Pesto Sandwich!
Notes
Can swap chicken for turkey or grilled vegetables for a vegetarian option. Pair with a salad for added texture.
