A juicy Chicken Pesto Sandwich featuring melted mozzarella and fresh basil pesto nestled in crusty ciabatta for a deliciously easy meal.

Ingredients

  • 2 pieces Chicken breasts
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons Pesto
  • 4 slices Fresh mozzarella cheese
  • 4 slices Ciabatta or preferred bread
  • Olive oil for cooking
  • (optional) Fresh basil leaves

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a pan over medium heat.
  3. Add the seasoned chicken breasts to the pan, cooking until golden brown and fully cooked, about 6 to 8 minutes per side.
  4. During the last few minutes of cooking, add the mozzarella slices on top of the chicken to melt.
  5. Remove the chicken from the pan and spread pesto on the inside of the ciabatta slices.
  6. Assemble the sandwich by placing the chicken on one piece of bread, adding fresh basil if desired, and topping with the other slice.
  7. Serve warm and enjoy your Chicken Pesto Sandwich!

Notes

Can swap chicken for turkey or grilled vegetables for a vegetarian option. Pair with a salad for added texture.
