Ingredients

  • 1 cup shredded cheddar cheese

  • 4 large flour tortillas

Instructions

  1. Mix together the shredded chicken, refried beans, cheddar cheese, and taco seasoning in a bowl.
  2. Place a generous amount of the chicken mixture in the center of each tortilla, fold in the sides, and roll up tightly.
  3. Heat oil in a large skillet over medium heat. Once hot, fry the chimichangas, seam side down, until golden brown and crispy, about 4 to 5 minutes per side.
  4. Remove the chimichangas from the oil and drain on paper towels to absorb excess oil.
  5. Serve hot with sour cream and salsa on the side for dipping.
