A Refreshingly Delicious Twist to the Classic Dessert

Ingredients

  • 1 cup Fresh cherries, pitted and halved
  • 1 cup Mascarpone cheese
  • 1 cup Heavy cream
  • 1/2 cup Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 cup Strong brewed coffee, cooled
  • 1 tablespoon Coffee liqueur (optional)
  • 6-8 Ladyfinger cookies
  • Cocoa powder, for dusting

Instructions

  1. Whip the cream: In a large bowl, mix mascarpone cheese, powdered sugar, heavy cream, and vanilla extract until smooth and creamy.
  2. Prepare the coffee mixture: In a shallow dish, combine cooled coffee and coffee liqueur.
  3. Layer the dessert: Dip ladyfingers in the coffee mixture and layer them in a serving dish. Spread half of the mascarpone mixture over the ladyfingers, top with halved cherries, and repeat layers. Finish with remaining mascarpone mixture.
  4. Refrigerate: Cover the dish and let it chill for at least 4 hours or overnight.
  5. Serve: Dust with cocoa powder before serving and garnish with additional cherries if desired.

Notes

This dessert can be made up to two days in advance. Store leftovers covered in the refrigerator for up to three days.
