Delicious Cheesy Spinach Muffins packed with flavor and nutrients, perfect for breakfast or a snack.

Ingredients

  • 2 cups Fresh spinach, chopped
  • 1 cup Shredded cheese (cheddar or mozzarella)
  • 1 cup All-purpose flour
  • 1 tablespoon Baking powder
  • 1 cup Milk
  • 2 Eggs
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, combine the flour and baking powder. Season with salt and pepper to taste.
  3. In a separate bowl, whisk together the milk and eggs until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the chopped spinach and cheese gently.
  6. Pour the batter into the muffin tin, filling each cup about two-thirds full.
  7. Bake for 20-25 minutes, or until the muffins are golden and a toothpick inserted in the center comes out clean.
  8. Let cool slightly in the pan, then transfer the muffins to a wire rack to cool completely.
