- 2 cups Fresh spinach, chopped
- 1 cup Shredded cheese (cheddar or mozzarella)
- 1 cup All-purpose flour
- 1 tablespoon Baking powder
- 1 cup Milk
- 2 Eggs
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, combine the flour and baking powder. Season with salt and pepper to taste.
- In a separate bowl, whisk together the milk and eggs until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the chopped spinach and cheese gently.
- Pour the batter into the muffin tin, filling each cup about two-thirds full.
- Bake for 20-25 minutes, or until the muffins are golden and a toothpick inserted in the center comes out clean.
- Let cool slightly in the pan, then transfer the muffins to a wire rack to cool completely.

These muffins can be served warm or stored in an airtight container for up to three days.
