Deliciously simple Cheesy Mashed Potato Puffs that combine creaminess with cheesy goodness, perfect for any occasion.

Ingredients

  • 2 lbs russet potatoes, peeled and cubed
  • 4 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheddar cheese, divided
  • 2 large eggs
  • 1/2 cup all-purpose flour

Instructions

  1. Peel and cube the potatoes.
  2. Boil the potatoes in salted water for 15 minutes or until fork-tender.
  3. Drain the potatoes and mash them with butter, salt, pepper, and half of the cheese.
  4. Let the mixture cool slightly, then mix in eggs and flour.
  5. Preheat the oven to 400°F (200°C).
  6. Form the mixture into small balls and place on a lined baking sheet.
  7. Top each puff with remaining cheese and bake for 20-25 minutes until golden brown.

Notes
