- 2 lbs russet potatoes, peeled and cubed
- 4 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded cheddar cheese, divided
- 2 large eggs
- 1/2 cup all-purpose flour
Instructions
- Peel and cube the potatoes.
- Boil the potatoes in salted water for 15 minutes or until fork-tender.
- Drain the potatoes and mash them with butter, salt, pepper, and half of the cheese.
- Let the mixture cool slightly, then mix in eggs and flour.
- Preheat the oven to 400°F (200°C).
- Form the mixture into small balls and place on a lined baking sheet.
- Top each puff with remaining cheese and bake for 20-25 minutes until golden brown.
Notes
For added flavor, consider mixing in roasted garlic, chives, or smoked paprika.
