- 4 medium potatoes
- Sea salt, to taste

- A little oil for spraying, as needed
- 1 small chopped onion
- 1 cup diced chicken breast
- 1 tbsp chili powder
- 2 tbsp ketchup
- 1 tbsp light soy sauce
- 1 small diced bell pepper
- 1 cup shredded mozzarella cheese
Instructions
- Prepare the Potato Base: Steam potatoes until soft, about 15 minutes, then mash with sea salt and black pepper. Shape into small tart shells.
- Sauté the Chicken Filling: In a skillet, heat oil and sauté onions until fragrant. Add diced chicken and cook until no longer pink. Stir in chili powder, ketchup, light soy sauce, sea salt, and black pepper; add diced bell pepper at the end.
- Assemble & Bake: Preheat oven to 200°C (392°F). Spoon chicken mixture into each potato tart shell, top with mozzarella cheese, and bake for 6 minutes until cheese melts and bubbles.
Notes
Customize with turkey instead of chicken or add more veggies like zucchini or mushrooms for additional nutrition.
