Crispy, spicy, and seriously addictive, these Cheesy Chicken & Potato Tarts are perfect for any gathering.

Ingredients

  • 4 medium potatoes
  • Sea salt, to taste
  • Black pepper, to taste
  • A little oil for spraying, as needed
  • 1 small chopped onion
  • 1 cup diced chicken breast
  • 1 tbsp chili powder
  • 2 tbsp ketchup
  • 1 tbsp light soy sauce
  • 1 small diced bell pepper
  • 1 cup shredded mozzarella cheese

Instructions

  1. Prepare the Potato Base: Steam potatoes until soft, about 15 minutes, then mash with sea salt and black pepper. Shape into small tart shells.
  2. Sauté the Chicken Filling: In a skillet, heat oil and sauté onions until fragrant. Add diced chicken and cook until no longer pink. Stir in chili powder, ketchup, light soy sauce, sea salt, and black pepper; add diced bell pepper at the end.
  3. Assemble & Bake: Preheat oven to 200°C (392°F). Spoon chicken mixture into each potato tart shell, top with mozzarella cheese, and bake for 6 minutes until cheese melts and bubbles.

Notes

Customize with turkey instead of chicken or add more veggies like zucchini or mushrooms for additional nutrition.
