- 4 ounces goat cheese, crumbled
- 1 egg, beaten (for egg wash)

Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat. Add sliced onions, seasoning with salt and pepper. Cook for 20-25 minutes until caramelized.
- Roll out the puff pastry on a floured surface and cut into desired shapes. Place on a baking sheet lined with parchment paper.
- Spoon caramelized onions onto the pastry, leaving a small border. Sprinkle crumbled goat cheese on top.
- Brush the edges of the pastry with beaten egg for a golden finish.
- Bake for 15-20 minutes until pastry is golden brown and puffed.
- Let cool slightly, garnish with fresh thyme, and serve warm.
