  • 2 large onions, thinly sliced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Add sliced onions, seasoning with salt and pepper. Cook for 20-25 minutes until caramelized.
  3. Roll out the puff pastry on a floured surface and cut into desired shapes. Place on a baking sheet lined with parchment paper.
  4. Spoon caramelized onions onto the pastry, leaving a small border. Sprinkle crumbled goat cheese on top.
  5. Brush the edges of the pastry with beaten egg for a golden finish.
  6. Bake for 15-20 minutes until pastry is golden brown and puffed.
  7. Let cool slightly, garnish with fresh thyme, and serve warm.
