- 2 large Onions, thinly sliced

- 4 ounces Goat Cheese, crumbled

Instructions
- Preheat your oven to 400°F (200°C).
- Heat the olive oil in a skillet over medium heat. Add the sliced onions and cook gently for 15-20 minutes, stirring occasionally, until caramelized. Season with salt and pepper.
- On a baking sheet, roll out the puff pastry and cut it into squares.
- Spoon the caramelized onions onto each pastry square and top with crumbled goat cheese.
- Bake for about 15-20 minutes until the pastry is golden brown.
- Garnish with thyme leaves before serving, if desired.
