- 2 large Cucumbers
- 1 cup Imitation crab meat, shredded
- 1 Avocado, diced
- 1/4 cup Green onions, chopped
- 2 tablespoons Rice vinegar
- 1 tablespoon Soy sauce

- Salt and pepper, to taste
- Seseame seeds, for garnish
Instructions
- Slice the cucumbers thinly and place them in a large bowl.
- Add the shredded imitation crab meat, diced avocado, and chopped green onions.
- In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, salt, and pepper. Pour this dressing over the salad and toss gently to combine everything. Garnish with sesame seeds before serving.
Notes
Best to chill before serving to enhance flavor. Keeps well in the fridge for up to 2 days.
