Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream the softened butter and 1/2 cup of powdered sugar until light and fluffy.
- Add the vanilla extract and stir until well combined.
- In a separate bowl, whisk together the all-purpose flour and salt.
- Gradually add the flour mixture to the butter mixture, stirring until just combined.
- Fold in the finely chopped pecans until evenly distributed.
- Form small balls of dough (about 1 inch in diameter) and place them on the prepared baking sheet, spaced about 1 inch apart.
- Bake for 12-15 minutes, or until the bottoms are lightly golden but the tops remain pale.
- Allow the cookies to cool for 5 minutes before rolling them in extra powdered sugar while still warm.
- Let cookies cool completely on a wire rack and optionally roll them in powdered sugar again for a final touch.
