  • 5 Large yams, peeled and cubed
  • 1/4 cup Butter
  • 1/2 cup Brown sugar
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1/2 cup Mini marshmallows
  • 3 Egg whites
  • 1/4 teaspoon Cream of tartar
  • 1/2 cup Granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil the cubed yams in a large pot of water until tender, about 15-20 minutes. Drain and cool.
  3. Mash the yams with butter, brown sugar, cinnamon, and nutmeg until creamy, then spread into a greased baking dish.
  4. Sprinkle mini marshmallows over the yam mixture.
  5. In a clean bowl, beat egg whites and cream of tartar until soft peaks form, then gradually add granulated sugar until stiff peaks form.
  6. Spread the meringue over the marshmallow layer and bake for 15-20 minutes until golden brown.
  7. Let cool slightly, then serve warm.

Notes

For a healthier version, substitute coconut oil for butter and use a natural sweetener like maple syrup.
