- 5 Large yams, peeled and cubed
- 1/4 cup Butter
- 1/2 cup Brown sugar
- 1/2 teaspoon Cinnamon
- 1/4 teaspoon Nutmeg
- 1/2 cup Mini marshmallows
- 3 Egg whites
- 1/4 teaspoon Cream of tartar
- 1/2 cup Granulated sugar
Instructions
- Preheat your oven to 350°F (175°C).
- Boil the cubed yams in a large pot of water until tender, about 15-20 minutes. Drain and cool.
- Mash the yams with butter, brown sugar, cinnamon, and nutmeg until creamy, then spread into a greased baking dish.
- Sprinkle mini marshmallows over the yam mixture.
- In a clean bowl, beat egg whites and cream of tartar until soft peaks form, then gradually add granulated sugar until stiff peaks form.
- Spread the meringue over the marshmallow layer and bake for 15-20 minutes until golden brown.
- Let cool slightly, then serve warm.
Notes
For a healthier version, substitute coconut oil for butter and use a natural sweetener like maple syrup.
