Ingredients
- 2 cups all-purpose flour
- 1/2 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon alcohol-free vanilla flavoring
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 cup milk
- 1 cup powdered sugar
- 2-3 tablespoons milk (for icing)
Instructions
Cream the butter and sugars: Beat butter, brown sugar, and granulated sugar for 2–3 minutes until smooth and creamy.
Add wet ingredients: Mix in the egg and alcohol-free vanilla flavoring until fully combined.
Combine dry ingredients: In a separate bowl, mix flour, salt, and cinnamon. Gradually add to the wet mixture until a dough forms.
Shape and fill: Roll dough to 1/4 inch thickness, cut into rectangles, add filling, top, and seal edges.
Bake: Bake at 180°C (350°F) for 15–20 minutes until lightly golden.
Notes
For a gluten-free option, swap the all-purpose flour for a suitable gluten-free blend. Get creative with add-ins like chocolate chips or different icing flavors.
