- 2 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1 cup vegetable or chicken broth
- 1 cup milk or cream
- 1 diced onion
- 2 cloves minced garlic
- 2 tablespoons olive oil

Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion and minced garlic, sauté until softened and fragrant for about 3-5 minutes.
- Add the broccoli florets and broth to the pot, bring to a boil, then reduce the heat.
- Simmer until the broccoli is tender, about 10 minutes. Use an immersion blender to blend until smooth. Alternatively, transfer in batches to a traditional blender.
- Stir in the milk or cream and shredded cheddar cheese until melted. Season with salt and pepper to taste.
Notes
For a vegan version, substitute dairy with almond milk and use a vegan cheese option. Consider adding other vegetables like carrots or spinach for added nutrients.
