A hearty and comforting breakfast casserole rich in flavor, perfect for family breakfasts or meal prepping.

Ingredients

  • 8 large Eggs
  • 1 cup Milk
  • 2 cups Cheddar cheese, shredded
  • 1 medium Chopped onion
  • 1 cup Diced bell pepper
  • 1 cup Spinach, chopped
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large skillet, heat olive oil over medium heat and sauté the onions and bell pepper until softened, about 5 minutes. Stir in the chopped spinach until wilted.
  3. In a separate bowl, whisk together the eggs, milk, salt, and pepper. Pour the egg mixture over the sautéed vegetables and gently mix in 1½ cups of shredded cheese.
  4. Transfer the mixture to the prepared baking dish, sprinkle with the remaining cheese, and bake for 25-30 minutes, or until golden and set.

Notes

Make sure to let the casserole cool for a few minutes before slicing to help maintain its shape. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
