Breakfast burritos are a delicious and satisfying start to your day, packed with protein and veggies.

Ingredients

  • 4 large flour tortillas
  • 6 large eggs
  • 1 cup cooked and crumbled sausage (or diced turkey)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1/2 cup salsa
  • Salt and pepper to taste
  • Butter or oil for cooking as needed

Instructions

  1. Sauté the Vegetables: Heat a skillet over medium heat, add butter or oil, and toss in diced onions and bell peppers. Sauté for about 5 minutes until softened.
  2. Scramble the Eggs: Crack the eggs into a bowl, add salt and pepper, whisk, then pour into the skillet with the veggies and scramble until cooked through.
  3. Assemble the Burritos: Stir in cooked sausage to the scrambled eggs. Place filling in the center of a tortilla, add cheese and salsa, fold the sides, and roll tightly.
