- 4 large flour tortillas
- 6 large eggs
- 1 cup cooked and crumbled sausage (or diced turkey)
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 cup diced bell peppers
- 1 cup diced onions
- 1/2 cup salsa
- Salt and pepper to taste
- Butter or oil for cooking as needed
Instructions
- Sauté the Vegetables: Heat a skillet over medium heat, add butter or oil, and toss in diced onions and bell peppers. Sauté for about 5 minutes until softened.
- Scramble the Eggs: Crack the eggs into a bowl, add salt and pepper, whisk, then pour into the skillet with the veggies and scramble until cooked through.
- Assemble the Burritos: Stir in cooked sausage to the scrambled eggs. Place filling in the center of a tortilla, add cheese and salsa, fold the sides, and roll tightly.
Notes
Customize your burritos by swapping proteins or adding extra vegetables. Serve with fresh fruit or coffee.
