- 1 bell pepper, sliced

Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Stir in chopped bok choy and sliced bell pepper. Stir-fry for 3 to 4 minutes until tender-crisp.
- Stir in soy sauce, seasoning with salt and pepper. Toss to coat.
- Top with sesame seeds or chopped green onions if desired before serving.
