- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup buttermilk
- 1/4 cup melted butter
- 1 large egg
- 1 tsp vanilla extract
- 1 cup fresh blueberries
- 1 cup powdered sugar (for glazing)
- 2-3 tbsp milk (for glazing)
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini donut pan.
- In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix the buttermilk, melted butter, egg, and vanilla extract until smooth. Gently fold the wet ingredients into the dry ingredients, and then fold in the blueberries.
- Spoon the batter into the mini donut pan, filling each cavity about 2/3 full. Bake for 10-12 minutes or until a toothpick comes out clean.
- Prepare the glaze by mixing powdered sugar with milk until smooth, dip the cooled donut bites into the glaze, and let them set before serving.
Notes
Store leftovers in an airtight container for up to five days. These donuts can also be frozen for longer storage.
