Ingredients

  • 1 cup All-Purpose Flour
  • 1/2 cup Cocoa Powder
  • 1 cup Sugar
  • 1/2 cup Butter (softened)
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 cup Cherries (pitted & halved)
  • 1 cup Whipped Cream
  • Chocolate Shavings (for topping, to taste)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a mini cake pan.
  2. In a medium bowl, mix together the flour, cocoa powder, baking powder, and salt.
  3. In a separate large bowl, beat the softened butter and sugar until light and fluffy. Add the eggs and vanilla, mixing until completely combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until no dry bits remain. Be careful not to overmix. Gently fold in the halved cherries.
  5. Pour the batter into the prepared mini cake pan, filling each cavity about two-thirds full.
  6. Bake for 15-20 minutes or until a toothpick comes out clean when inserted into the center.
  7. Let the mini cakes cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  8. Top each mini cake with whipped cream and a sprinkle of chocolate shavings before serving.
