  • 4 large eggs

  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan to prepare for baking.
  2. Combine the almond flour, erythritol, baking powder, and salt in a large bowl for the dry mix.
  3. Whisk together the eggs, melted butter, lemon juice, lemon zest, and vanilla extract in another bowl until well blended.
  4. Pour the wet ingredients into the dry ingredients and mix until everything is well combined and smooth.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
