- 1/2 cup erythritol

Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan to prepare for baking.
- Combine the almond flour, erythritol, baking powder, and salt in a large bowl for the dry mix.
- Whisk together the eggs, melted butter, lemon juice, lemon zest, and vanilla extract in another bowl until well blended.
- Pour the wet ingredients into the dry ingredients and mix until everything is well combined and smooth.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the lemon bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely before slicing.
Notes
Let the bread cool completely for best slicing. Substitute erythritol with monk fruit sweetener if desired.
