Deliciously fluffy panettone, a classic Italian treat, perfect for holidays.

Ingredients

  • 500g All-purpose flour
  • 200g Sugar
  • 10g Salt
  • 25g Active dry yeast
  • 200ml Warm milk
  • 100g Unsalted butter, softened
  • 4 large Eggs
  • 200g Candied citrus peel
  • 150g Raisins
  • 1 teaspoon Vanilla extract
  • Zest of 1 lemon
  • Zest of 1 orange

Instructions

  1. Combine warm milk and active dry yeast in a bowl. Let sit for about 10 minutes until frothy.
  2. In a large mixing bowl, add flour, sugar, and salt. Make a well and add the yeast mixture, beaten eggs, softened butter, vanilla extract, lemon zest, and orange zest. Mix and knead for about 10 minutes until smooth.
  3. Fold in the candied citrus peel and raisins gently.
  4. Allow the dough to rise in a greased bowl for about 2 hours until doubled in size.
  5. Punch down the dough, shape it into a ball, and place it in a panettone mold. Let it rise again for about 1 hour.
  6. Preheat the oven to 350°F (175°C). Bake for 30-40 minutes until golden brown.
  7. Cool completely before slicing.

Notes

Store in a cool, dry place, wrapped to keep it fresh for days. You can also freeze it by wrapping tightly in plastic and foil.
