Crispy on the outside and cheesy on the inside, these Baked Zucchini Cheese Bites are the perfect snack or appetizer for any occasion.

Ingredients

  • 2 Medium Zucchinis, grated
  • 1 cup Shredded Cheese (Mozzarella or Cheddar)
  • 1/2 cup Breadcrumbs
  • 2 Eggs
  • 1/4 cup Grated Parmesan Cheese
  • 1 teaspoon Garlic Powder
  • Salt & Pepper to taste
  • Olive Oil for greasing

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking sheet with olive oil.
  2. In a large bowl, combine the grated zucchini, shredded cheese, breadcrumbs, eggs, Parmesan cheese, garlic powder, salt, and pepper. Mix well.
  3. Scoop out small portions of the mixture and shape them into balls or patties. Place on the prepared baking sheet.
  4. Bake in the preheated oven for about 20-25 minutes, until golden brown and crispy.
  5. Let cool slightly before serving.

Notes

These bites can be served warm or at room temperature and pair wonderfully with marinara sauce, ranch dressing, or a yogurt dip. They can also be made gluten-free by substituting the breadcrumbs with almond flour.
