- 2 Medium Zucchinis, grated
- 1 cup Shredded Cheese (Mozzarella or Cheddar)
- 1/2 cup Breadcrumbs
- 2 Eggs
- 1/4 cup Grated Parmesan Cheese
- 1 teaspoon Garlic Powder
- Salt & Pepper to taste
- Olive Oil for greasing
Instructions
- Preheat your oven to 400°F (200°C) and grease a baking sheet with olive oil.
- In a large bowl, combine the grated zucchini, shredded cheese, breadcrumbs, eggs, Parmesan cheese, garlic powder, salt, and pepper. Mix well.
- Scoop out small portions of the mixture and shape them into balls or patties. Place on the prepared baking sheet.
- Bake in the preheated oven for about 20-25 minutes, until golden brown and crispy.
- Let cool slightly before serving.
Notes
These bites can be served warm or at room temperature and pair wonderfully with marinara sauce, ranch dressing, or a yogurt dip. They can also be made gluten-free by substituting the breadcrumbs with almond flour.
