- 1 pound fresh salmon fillet, skin removed
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 egg
- 2 cloves garlic, minced

- 1 avocado
- 1 tablespoon lemon juice
- 2 tablespoons Greek yogurt or sour cream
- Salt to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a food processor, combine the fresh salmon, breadcrumbs, grated Parmesan cheese, parsley, egg, minced garlic, salt, and pepper. Blend until mostly smooth.
- Using your hands, form the mixture into meatballs and place them on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes, or until cooked through.
- In a bowl, mash the avocado and mix with lemon juice, Greek yogurt, and salt to prepare the creamy avocado sauce.
Notes
Feel free to experiment with flavors by adding spices or swapping breadcrumbs for almond flour for a low-carb option.
