Instructions

- Fold the diced rhubarb into the batter until evenly distributed.
- Scoop mounds of batter onto the prepared sheet pan, leaving space between each one.
- Bake the fritters for 12 to 16 minutes, or until lightly golden and set.
- Prepare the glaze by mixing powdered sugar with a tiny splash of milk or lemon juice, vanilla, and a pinch of salt until thick.
- Glaze the warm fritters by brushing the mixture evenly over each one.
- Broil briefly for 30 to 90 seconds to set the glaze, but watch closely to avoid burning.
