These baked rhubarb fritters are a simple yet delicious dessert that showcases the tartness of fresh rhubarb, with a fluffy texture and sweet glaze on top.

  • Total Time: 30 minutes
  • Yield: 12 fritters 1x

Ingredients

Units Scale
  • 2 cups diced fresh rhubarb
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup milk or buttermilk
  • 1 large egg
  • 1/4 cup melted butter or neutral oil
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 1-2 tablespoons milk or lemon juice (for glaze)
  • 1 teaspoon vanilla extract (optional, for glaze)
  • A tiny pinch of salt

Instructions

  1. Preheat your oven to 400°F and line a sheet pan with parchment paper.
  2. Mix the dry ingredients, including the flour, baking powder, sugar, and salt until combined.
  3. Whisk together the egg, milk, vanilla, and melted butter until smooth.
  4. Pour the wet mixture into the dry mixture and stir gently until it’s barely combined.
  5. Fold the diced rhubarb into the batter until evenly distributed.
  6. Scoop mounds of batter onto the prepared sheet pan, leaving space between each one.
  7. Bake the fritters for 12 to 16 minutes, or until lightly golden and set.
  8. Prepare the glaze by mixing powdered sugar with a tiny splash of milk or lemon juice, vanilla, and a pinch of salt until thick.
  9. Glaze the warm fritters by brushing the mixture evenly over each one.
  10. Broil briefly for 30 to 90 seconds to set the glaze, but watch closely to avoid burning.

Notes

Do not overmix the batter; it helps keep fritters tender. Use almond milk for a dairy-free option.
