Ingredients

  • 3 Boneless skinless chicken breasts
  • 1 pound Fresh asparagus, trimmed
  • 1 cup Shredded mozzarella cheese
  • 1/4 cup Grated parmesan cheese
  • 2 cloves Garlic, minced
  • 1/2 cup Heavy cream
  • 2 tablespoons Olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoons Fresh chopped parsley (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
  2. Wash and trim the asparagus, laying it evenly across the baking dish.
  3. Pat the chicken breasts dry, rub them with olive oil, and season with salt and pepper. Place atop the asparagus.
  4. In a small bowl, mix the heavy cream, minced garlic, half of the mozzarella, and half of the parmesan cheese. Pour over the chicken and asparagus.
  5. Top with the remaining mozzarella and parmesan cheese.
  6. Bake uncovered for about 25-30 minutes, or until chicken reaches an internal temperature of 165°F and cheese is golden and bubbly.

Notes

For a gluten-free option, use gluten-free breadcrumbs instead of cheese on top. Consider adding fresh herbs like thyme or a squeeze of lemon juice for extra flavor.
