- 3 Boneless skinless chicken breasts
- 1 pound Fresh asparagus, trimmed
- 1 cup Shredded mozzarella cheese
- 1/4 cup Grated parmesan cheese
- 2 cloves Garlic, minced
- 1/2 cup Heavy cream
- 2 tablespoons Olive oil
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
- 2 tablespoons Fresh chopped parsley (optional)
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
- Wash and trim the asparagus, laying it evenly across the baking dish.
- Pat the chicken breasts dry, rub them with olive oil, and season with salt and pepper. Place atop the asparagus.
- In a small bowl, mix the heavy cream, minced garlic, half of the mozzarella, and half of the parmesan cheese. Pour over the chicken and asparagus.
- Top with the remaining mozzarella and parmesan cheese.
- Bake uncovered for about 25-30 minutes, or until chicken reaches an internal temperature of 165°F and cheese is golden and bubbly.
Notes
For a gluten-free option, use gluten-free breadcrumbs instead of cheese on top. Consider adding fresh herbs like thyme or a squeeze of lemon juice for extra flavor.
