Ingredients

  • 1 cup fresh asparagus, trimmed and cut into 2-inch pieces
  • 1 cup Gruyere cheese, grated
  • 3 large eggs
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a floured surface and fit it into a tart pan, pricking the bottom with a fork.
  3. Whisk together the eggs, heavy cream, salt, and pepper in a mixing bowl.
  4. Sprinkle the grated Gruyere cheese over the prepared pastry.
  5. Arrange the asparagus pieces artfully on top of the cheese.
  6. Pour the egg and cream mixture over the asparagus and cheese.
  7. Bake in the preheated oven for 25 to 30 minutes, or until golden brown.
