- 4 medium Carrots (shaved into ribbons)

- 1-2 teaspoons Honey or maple syrup (for vegan)

- 2.5 tablespoons Olive oil
- 1 tablespoon Toasted sesame seeds
- A splash Lime or lemon juice
- Salt to taste
- Thinly sliced scallions to taste
- Fresh herbs (mint, cilantro, Thai basil) to taste
- Crushed peanuts or toasted cashews for garnish
Instructions
- Wash the carrots thoroughly and then shave them into ribbons using a sharp knife or a vegetable peeler.
- Combine rice vinegar, soy sauce, honey or maple syrup, and chili flakes in a small mixing bowl, whisking until smooth.
- Toss the shaved carrots with the dressing in a large mixing bowl until well coated.
- Garnish with toasted sesame seeds, fresh herbs, and scallions before serving.
Notes
Dress the salad just before serving to keep everything crunchy. Use fresh herbs to enhance flavor.
