Ingredients

  • 4 medium Carrots (shaved into ribbons)
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Soy sauce (or tamari for gluten-free)
  • 1-2 teaspoons Honey or maple syrup (for vegan)
  • 1 teaspoon Chili flakes (adjust to taste)
  • 2.5 tablespoons Olive oil
  • 1 tablespoon Toasted sesame seeds
  • A splash Lime or lemon juice
  • Salt to taste
  • Thinly sliced scallions to taste
  • Fresh herbs (mint, cilantro, Thai basil) to taste
  • Crushed peanuts or toasted cashews for garnish

Instructions

  1. Wash the carrots thoroughly and then shave them into ribbons using a sharp knife or a vegetable peeler.
  2. Combine rice vinegar, soy sauce, honey or maple syrup, and chili flakes in a small mixing bowl, whisking until smooth.
  3. Toss the shaved carrots with the dressing in a large mixing bowl until well coated.
  4. Garnish with toasted sesame seeds, fresh herbs, and scallions before serving.

Notes

Dress the salad just before serving to keep everything crunchy. Use fresh herbs to enhance flavor.
