- 5 Persian cucumbers
- 1/2 tsp salt
- 1/2 tbsp sesame oil
- 3/4 tbsp light soy sauce
- 1/2-1 tbsp sugar
- 3/4 tbsp rice vinegar
- 1 tbsp chili oil
- 1/2 tbsp sesame seeds
- 1/2 tbsp garlic
Instructions
- Rinse Persian cucumbers under cool running water. Slice at an angle for oval pieces.
- Toss the cucumber slices with salt in a mixing bowl and let sit for 20 minutes.
- Drain and rinse the cucumbers to wash away excess salt. Return to the bowl.
- Pour in sesame oil, light soy sauce, sugar, rice vinegar, and chili oil. Mix gently with sesame seeds and minced garlic until combined.
- Serve chilled for the best flavor and crunch.
Notes
Cool the cucumbers before serving for optimal crunch. Adjust the sweetness by using honey instead of sugar if preferred.
