Ingredients

  • 5 Persian cucumbers
  • 1/2 tsp salt
  • 1/2 tbsp sesame oil
  • 3/4 tbsp light soy sauce
  • 1/2-1 tbsp sugar
  • 3/4 tbsp rice vinegar
  • 1 tbsp chili oil
  • 1/2 tbsp sesame seeds
  • 1/2 tbsp garlic

Instructions

  1. Rinse Persian cucumbers under cool running water. Slice at an angle for oval pieces.
  2. Toss the cucumber slices with salt in a mixing bowl and let sit for 20 minutes.
  3. Drain and rinse the cucumbers to wash away excess salt. Return to the bowl.
  4. Pour in sesame oil, light soy sauce, sugar, rice vinegar, and chili oil. Mix gently with sesame seeds and minced garlic until combined.
  5. Serve chilled for the best flavor and crunch.

Notes

Cool the cucumbers before serving for optimal crunch. Adjust the sweetness by using honey instead of sugar if preferred.
