Instructions
- Season the chicken breasts generously with paprika, cumin, salt, and pepper.
- In a large skillet, heat the olive oil over medium heat and cook the chicken for about 6-7 minutes on each side until golden brown and cooked through.
- Remove the chicken and in the same skillet, add garlic and zucchini, sautéing for about 3-4 minutes until tender yet still crunchy.
- Adjust seasoning and squeeze lemon juice over the dish before serving.
Notes
For added flavor, consider marinating the chicken in yogurt and herbs for a few hours before cooking. This dish pairs well with quinoa or whole grain rice.
