- 1 cup quinoa
- 2 cups water
- 2 apples, diced
- 1/2 cup dried cranberries
- 1/2 cup candied walnuts
- 1/4 cup maple syrup
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water using a fine-mesh strainer.
- Combine the rinsed quinoa with 2 cups of water in a medium saucepan and bring to a boil. Reduce the heat, cover, and simmer for approximately 15 minutes until fluffy.
- Allow the quinoa to cool slightly, then mix with diced apples, dried cranberries, and candied walnuts in a large bowl.
- In a small bowl, whisk together the maple syrup, Dijon mustard, olive oil, salt, and pepper for the dressing.
- Pour the dressing over the salad and toss gently to combine. Serve immediately or chill for about 30 minutes for flavors to meld.
Notes
Can be refrigerated for up to 3 days. For a vegan option, replace maple syrup with agave nectar.
