Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 apples, diced
  • 1/2 cup dried cranberries
  • 1/2 cup candied walnuts
  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water using a fine-mesh strainer.
  2. Combine the rinsed quinoa with 2 cups of water in a medium saucepan and bring to a boil. Reduce the heat, cover, and simmer for approximately 15 minutes until fluffy.
  3. Allow the quinoa to cool slightly, then mix with diced apples, dried cranberries, and candied walnuts in a large bowl.
  4. In a small bowl, whisk together the maple syrup, Dijon mustard, olive oil, salt, and pepper for the dressing.
  5. Pour the dressing over the salad and toss gently to combine. Serve immediately or chill for about 30 minutes for flavors to meld.

Notes

Can be refrigerated for up to 3 days. For a vegan option, replace maple syrup with agave nectar.
