Ingredients

  • 1 apple (finely chopped or grated)
  • 1/2 cup nut butter
  • 1/4 cup honey or maple syrup
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Prepare your apple by finely chopping or grating it.
  2. In a medium bowl, combine rolled oats, ground cinnamon, and salt; whisk well.
  3. Add nut butter, honey or maple syrup, and vanilla extract to the dry mixture and mix until a sticky dough forms.
  4. Fold in the prepared apple until evenly distributed.
  5. Wet your hands and roll the mixture into bite-sized balls.
  6. Place the energy bites on a plate or lined baking sheet and refrigerate for at least 30 minutes until firm.

Notes

Store leftovers in an airtight container in the refrigerator for about one week, placing parchment paper between layers to prevent sticking.
