- 2 cups golden potatoes, diced
- 1 cup sweet carrots, sliced
- 1 cup crisp green beans, trimmed
- 1 pound ground beef
- 1 can (14 oz) diced tomatoes
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Brown the ground beef in a large skillet over medium heat until fully cooked. Drain excess fat.
- In a large mixing bowl, combine the diced potatoes, sweet carrots, green beans, cooked ground beef, diced tomatoes, garlic powder, onion powder, Italian herbs, salt, and pepper. Mix well.
- Transfer the mixture to a greased 9×13 inch baking dish. If desired, sprinkle shredded cheese on top.
- Cover the dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes until golden and tender.
- Let cool for a few minutes before serving.
Notes
For a vegetarian version, substitute ground beef with lentils or quinoa. This casserole can also be paired with a crisp green salad or homemade cornbread.
