Ingredients

  • 2 cups golden potatoes, diced
  • 1 cup sweet carrots, sliced
  • 1 cup crisp green beans, trimmed
  • 1 pound ground beef
  • 1 can (14 oz) diced tomatoes
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Brown the ground beef in a large skillet over medium heat until fully cooked. Drain excess fat.
  3. In a large mixing bowl, combine the diced potatoes, sweet carrots, green beans, cooked ground beef, diced tomatoes, garlic powder, onion powder, Italian herbs, salt, and pepper. Mix well.
  4. Transfer the mixture to a greased 9×13 inch baking dish. If desired, sprinkle shredded cheese on top.
  5. Cover the dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes until golden and tender.
  6. Let cool for a few minutes before serving.

Notes

For a vegetarian version, substitute ground beef with lentils or quinoa. This casserole can also be paired with a crisp green salad or homemade cornbread.
