Ingredients

  • 1/4 cup (60 ml) Honey or Maple Syrup
  • 1/2 teaspoon Vanilla Extract
  • 1/4 cup (40 g) Mini Dark Chocolate Chips (optional)
  • Pinch Sea Salt

Instructions

  1. In a large mixing bowl, combine rolled oats, chia seeds, and shredded coconut (if desired) and stir well.
  2. Add almond butter, honey (or maple syrup), and vanilla extract to the dry mixture and stir until evenly mixed and sticky.
  3. Wet your hands and form the mixture into 1-inch diameter balls, placing them on a tray lined with parchment paper.
  4. Refrigerate for at least 30 minutes to firm up before storing in an airtight container for up to one week.
